Bake 350° 1 hour. Serves 12-15. Okay to make ahead and reheat.
3 to 4 lbs. chicken breasts
6 flour tortillas
6 flour tortillas
1 can cream of mushroom soup
1 can cream of chicken soup
1 c chopped onion
1 T chili powder
1/2 lb. cheddar cheese
1/2 lb. cheddar cheese
1 can Rotel tomatoes
Simmer chicken breasts until tender; save stock. Dice chicken,
Grease 3 qt. casserole or 9X12 pan. Line bottom and sides with 6 tortillas cut up as pictured. Sprinkle with 2 T of stock.
Combine soups, onion, and chili powder.
Pour half of mixture, half of chicken, and cheese on tortillas. Make a second layer. Top with layer of tomatoes.
