- 1 lb. beef stir-fry strips, London broil is very tender and a good choice
- 2 t. Greek seasoning
- 1 T vegetable oil
- 6 soft pita breads, warmed. You can use tortillas if that's all you've got!
- 1 c cherry tomatoes, quartered, about 20 or so
- 1/2 cucumber cut into thin strips
- 1/2 c crumbled feta cheese
- 1/2 c ranch dressing
- Cut beef into small pieces. Toss with greek seasoning.
- In large skillet, heat oil over medium-high heat. Add beef, half at a time, stirring 2-3 minutes or until browned.
- Divide beef into six servings and top with cheese, tomatoes and cucumber. Drizzle with ranch dressing.
