Coconut Macaroons

 
Southern Living Cookbook 1987

350° for 18 minutes


Silpat cooking  mat                  Gotta have this or forget it. They will stick beyond repair.

4 slightly beaten egg  whites
2/3 cup sugar
2 2/3 cup flaked coconut
4 T flour
1 t vanilla
1/4 t salt

After the eggs are slightly beaten, add remaining  ingredients.

Drop by teaspoon onto SILPAT. (If not using silpat, well grease the cookie sheet. The macaroons will probably stick and you will have to act face and remove from sheet quickly after baking. Just use a  silpat!)
Bake.
Makes 2 dozen
