10-Minute Gyros

    Ingredients
  1. 1 lb. beef stir-fry strips, London broil  is very tender and a good choice
  2. 2 t.  Greek seasoning
  3. 1 T vegetable oil
  4. 6 soft pita breads, warmed. You can use tortillas if that's all you've got!
  5. 1 c cherry tomatoes, quartered, about 20 or so
  6. 1/2 cucumber cut into  thin strips
  7. 1/2 c crumbled feta cheese
  8. 1/2 c ranch dressing
  9. Directions
  10. Cut beef into small pieces. Toss with greek seasoning.
  11. In large skillet, heat oil over medium-high heat. Add beef, half at a time, stirring 2-3 minutes or until browned.
  12. Divide beef into six servings and top with cheese, tomatoes and cucumber.  Drizzle with ranch dressing.
